Spiced Syrup: In saucepan, combine sugar, 1 cup water, vanilla, cinnamon stick, cloves and star anise; bring to boil over medium heat. Reduce heat to medium-low and simmer for about 14 minutes or until sugar dissolves and mixture turns a light golden color. Strain, reserving cinnamon, cloves and star anise.

Meanwhile, cut ends off clementines. Using sharp knife, cut off peel and outer pith of each clementine. Tightly pack clementines, reserved cinnamon, cloves and star anise into 2-cup Mason jar. Pour hot syrup over top. Seal with lid and screw band. Refrigerate for at least 8 hours or up to 5 days.
Clementines are peeled and packed into jars, then topped with a spiced simple syrup. They make an elegant stand-alone dessert, or you can serve them over ice cream, yogurt or spice cake.
